ASIAN PRAWN COLESLAW - Serves 4
½ head white cabbage, finely shredded
2 large carrots, coarsely grated
4 large handfuls bean sprouts
Large handful cashew nuts
Large handful coriander leaves
200g cooked prawns
For the dressing :
zest & juice of 2 limes
4 tsp sugar
2 tbsp sesame oil
2 red chilies, chopped
small knob ginger, grated
Mix all the dressing ingredients together in a large bowl, mix in the cooked prawns and leave to marinade for about 20 minutes. Add the rest of the ingredients, mix well and serve on individual plates. Garnish with some of the chopped coriander.
