Crab Noodle Salad

With the sun still shining here is another light and fresh salad with Thai flavours...perfect for a lazy day...and so simple
Crab noodle salad: for 2 people
100g rice noodles
1/2 courgette, grated
1/2 cucumber, halved deseeded & thinly sliced
100g crab meat (from a tin is fine)
1 small red chilli, finely chopped
4 spring onions, chopped
Handful mint leaves, chopped
2 tbsp rice wine vinegar
1-2 tbsp fish sauce
1 tsp sesame oil
1 tsp soft brown sugar
Juice & zest 1 lime
Mix all the dressing ingredients together, taste and adjust the seasoning if necessary.
Cover the noodles in freshly boiled water and let soak for 5 mins, drain, rinse under cold water. Drain well and add to the dressing.
Stir through the grated courgette. Cool.
Mix through the crab meat and remaining ingredients.
Pile onto plates, drizzle over any remaining dressing. Serve with more lime wedges.
